A deep south heat treat. It contains several different types of ground chilies, and includes a robust blend of other spices and herbs...with flavors found in both cajun and southwestern cooking. Our vision was not a typical southwestern rub, but one that drew on cajun influences as well. But instead of typical cajun, we use other chilies and southwestern herbs like sage. Pork chops, chicken pieces, burgers, pork loin, catfish are a few things to start with.
